OK I know there are shedloads of CD rippers about but there's CD RIPPERS and there are cd rippers. Audio CD Ripper Pro is definitely the bees knees of them all.

Audio CD Ripper Pro is very simple to use with an intuitive GUI and rips tracks from audio CDs and converts them to the popular sound file formats such as MP3, WAV and the fast rising OGG (Ogg Vorbis). There is automatic retrieval of disk information (e.g. Artist, Album, Genre track names etc.) from FreeDB, the music information database on the Internet.

You can also perform extraction of track fragments with a user-defined start and end position. Audio CD Ripper Pro can handle ID3v1/ID3v2 tags information and create M3U playlists. Other features include direct recording of multiple tracks, read track information from cdplayer.ini file and use multiple CD drives as data sources. Compilation discs are fully supported as well as direct Audio CD playing right from the program.

Well designed, simple to use and reasonably priced it certainly gets my vote.
